*~Gingered Cranberry and Poppy Seed Spice Bread ~* 1 1/4 cups all~purpose flour 1 teaspoon salt 1 teaspoon baking soda 1 teaspoon cinnamon 1 egg 1 cup milk 2 tablespoons butter, softened 1 1/2 cups dried cranberries 1 cup sugar 1/4 cup sliced, crystallized ginger 2 tablespoons poppy seeds MAKES ONE LOAF (double butter for moister bread) In a large mixing bowl, combine the flour, salt, baking soda and cinnamon ~* Add the egg, milk and butter, mixing well ~* In a separate bowl, combine the cranberries, sugar and ginger ~* Add to the flour mixture, stirring well ~* Turn the batter into a greased 9x5~inch loaf pan and sprinkle the top with poppy seeds ~* Bake at 375 degrees for 40 minutes or until the cake is browned on the top ~* ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ This very fine sweet treat recipe is from the Galley of the Pauline as prepared by Chef Emily Franklin ~* ~* |
