Red Velvet Cake
1/2 cup margarine = one stick
1 & 1/2 cups of granulated sugar
3 eggs
2 Tbs cocoa
2 oz red food coloring
1 Tbs vanilla
1 cup buttermilk
2 & 1/4 cups sifted self~rising flour
1 Tbs vinegar

cream margarine & sugar........................
add eggs.....................
mix cocoa & coloring in measuring cup to make paste...............
add paste to creamed mixture...............
add vanilla..............
pour buttermilk into measuring cup to get all coloring from cup.......
add buttermilk to cake batter mixture.............
add flour to mixture and mix well..............
fold vinegar into mixture...............
spray three 8 inch cake pans with non~stick cooking spray.............
add cake batter mixture to cake pans..............
bake for 20 minutes in 300 degree oven................
NOTE: cooking time may vary, more or less !!

CREAM CHEESE FROSTING
one or two 8 oz cream cheese............
one or 2 sticks butter or margarine..................
at least 3 cups confectioners/powdered sugar..............

place ingredients into mixing bowl and mix with power mixer until mixture
is creamy and fluffy !!
Pecan Pie
2 Tbs self rising flour
1/2 cup granulated sugar
1/2 cup butter = one stick
3 eggs
1 cup Blackburn syrup
1 tsp. vanilla
1 cup Pecan Halves

set oven temp. to 375 degrees.....................
mix flour, sugar & eggs together..................................
melt butter in measuring cup then add syrup to measuring cup then
pour into mixture...............
add vanilla to mixture & mix well.................
arrange Pecans in bottom of unbaked pastry shell.............
pour mixture over Pecans...............
bake 10 minutes at 375 degrees then reduce heat to 325 degrees &
bake 45 minutes more/longer.......................
then take the delicious smelling pecan pie out of the oven and let it
cool for at least 2 hours...............when cooled, dig in,,,,,,,,,,it sure will
be good !!
